For the crust:

  • 2 cups of Conchita Maria Cookies, crumbs
  • 3 tbsp. granulated sugar
  • 1 tbsp. cinnamon
  • ½ cup unsalted butter, melted

For the filling:

  • 1 ½ cups Conchita Dulce de Leche
  •  3 bananas ripe & firm
  •  1 cup heavy cream, cold
  •  2 tbsp.  granulated sugar
  •  2 tsp.  vanilla extract
    +
    Add 1/2 cup of one of these special toppings:
  • Grated chocolate
  • Shredded coconut
  • Chopped pistachio

Instructions

  1. Add  Conchita Maria cookies in a food processor and stir together the cookie crumbs, sugar, cinnamon and melted butter in a bowl and mix well. Press the mix well with your hands and create pie’s crust in a circled bake pan.
  2. When ready, cover crust with plastic wrap and place in the fridge for an hour.
  3. When ready, spread Conchita Dulce de Leche on top of the crust.
  4. Add one even layer of thinly chopped bananas over Conchita’s Dulce de Leche.
  5. Whisk heavy cream and the rest of the ingredients in high speed until soft peaks form.
  6. Spread whipped cream over bananas and refrigerate for 3 hours.
