
Whether or not you celebrate Cinco de Mayo, it’s a fantastic day to remember and honor our Hispanic roots!
Here’s a quick and easy refried beans recipe for your tacos!
INGREDIENTS
2 cans of Conchita Pinto Beans, rinsed and drained
1 tablespoon of Conchita Extra-Virgin Olive Oil
2/3 cup finely chopped onion
¼ teaspoon fine sea salt
2 smashed garlic cloves
½ teaspoon chili powder
1 teaspoon cumin
½ tablespoon of Conchita All-Purpose Sazón
½ cup water
2 tablespoons chopped fresh cilantro
1 tablespoon of Conchita Lemon Blend Juice
White flour fajitas
INSTRUCTIONS
1. Heat Conchita Extra-Virgin Olive Oil in a skillet over medium heat, add the minced garlic and onion, stirring occasionally for 6 minutes.
2. Add in the Conchita Pinto Beans (drained), Conchita All-Purpose Sazón, chili powder, cumin and water. Stir, cover and cook for 5 minutes.
3. Smash bean mixture with a potato masher or blender.
4. Add Conchita Lemon Blend Juice on smashed beans and stir.
5. Move mix into a clean bowl and stir in the cilantro, add more salt and lime juice if necessary.
5. Heat up your fajitas on a skillet, add your favorite ingredients and finish it off with our delicious refried beans mix!
6. Cover until you’re ready to serve.
