
Ingredients:
1 15.5 oz can Conchita Pinto Beans, drained
2 slices bacon
½ cup onion, finely chopped
½ tomato finely chopped
chopped cilantro – to taste
½ cup grated Monterrey Jack cheese
½ green onions, chopped
How to make it:
Cook bacon and remove to paper towel. Using a portion of the grease from bacon, add the can of pinto beans, crumbled bacon, chopped onions, tomato, garlic, cilantro and salt to taste. Simmer for 10 mins. And mash with potato masher until desired consistency. Heat beans uncovered, until liquid is evaporated and texture is correct. Top with Monterrey Jack cheese and green onions.
